My Homemade Brownie Recipe

Everyday can be a Brownie kind of day!  Just the smell of Brownies in the oven brings everyone into the kitchen at my house.  These are delicious, easy to make and are a special treat that can be made fairly quickly.

We make them in a cast iron skillet (I'll explain why further down if you're interested) but you can use any baking dish and adjust cook time accordingly.

 Here's what you'll need:

  • 1 generous cup of semi-sweet chocolate chips (divided in half)
  • 1/2 cup butter
  • 2 eggs
  • 1 tablespoon dark cocoa powder
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup sugar
  • 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

(I had no other use for dark cocoa powder so I only buy a few tablespoons at a time from the Bulk Barn) 

Preheat oven to 350 degrees.  In a bowl over simmering water melt the butter, 1/2 cup of chocolate chips and cocoa powder.  Once melted, remove from heat and set aside.  In a separate bowl, gently stir together (don't whip) the eggs, vanilla and sugar until just mixed.  Add the egg mixture to the chocolate mixture.  Mix together the flour, baking powder and salt and stir into the chocolate mixture.  Add the remaining half cup of chocolate chips to the mix.  Pour into your cast skillet (we use a 10 inch skillet) and bake for approx. 25 minutes.  You can adjust the time as needed depending on the cooking dish you're using.

Why do I cook brownies in a cast iron skillet?  I try to cook as much as I can in cast iron.  I find it easy to clean and because it goes from stove top to oven, I don't need as many pots and pans.  The bonus is that it helps improve iron levels.  I like many women have low iron levels which makes me tired.  I have tried various types of supplementation which made me feel horrible so I gave up on them pretty quickly.  I use cast iron cookware whenever I can and it seems to help me.  Studies have shown that when you cook in cast iron it can add significant amounts of iron to your food so it's an easy way to boost iron intake.  Now, I'm not sure how much iron is being transferred into my brownies... but it's worth a shot!
